This beans characterized by the yellowish color which take to full maturation are typical of Tuscan's Appennino. They have particular characteristics as peel fine, thick and cremy consistency and intense taste; rich of proteins, vitamine and useful to hold under control the levels of cholesterol. Must be put in soaking and then cooked in water, are ideal in salads, as side dish or tasted alone with extra virgin olive oil.
