The piattelle beans with their flat shape and the mild taste fit beautifully both as side dish which in the minestrone; as all legumes are a balanced aliment, completely without cholesterol and rich of fiber. Excellent in many preparations, are exquisite boiled seasoned with extra virgin olive oil. After soaking of about 8 hours, put the beans in a pot of cold water where you will have added some aromas, from the moment boils cook for about 60 minutes.
